I LOVE EGGS... I literally eat them for any meal of the day, they are so versatile.
Anyway, I call this recipe 'exquisite eggs' because well it is yummy! To top it off it is gluten, dairy and nut free - because those are my dietary requirements but I still like my food to be packed with flavour and FUN!
Prep/cook time: 5 mins | Serves: 1 (because Joey doesn't share food) | GF, DF & NF
1 slice of GF bread
Decent handful of spinach
Mixed seeds (I get mine from The Source)
Spices: paprika, cayenne pepper, salt & pepper
Do it like this:
Poach eggs however you like (I use the quick microwave method!)
Fry spinach in a small pan with a dash of garlic infused olive oil with spices. Toss in the seeds at the end to coat in flavour.
Pop eggs and spinach mix on top of the GF toast.
Mix a dollop of mayonnaise with a 5c piece of Dijon mustard and pour over the top. Sprinkle with some black sesame seeds for an added crunch!
